This dinner highlights wagyu hybrid beef from Pioneer Ranch. Every course respects the animal and the product. Nothing wasted. Nothing overworked.

FIRST COURSE

87° Wagyu Carpaccio / Thin-sliced wagyu hybrid beef served at 87°F with preserved citrus, olive oil, cracked pepper, and seasonal greens

SECOND COURSE

Localvore × Wagyu Salad / Seasonal farm greens with warm wagyu, shaved root vegetables, fresh herbs, toasted seeds, and a bright wagyu-fat vinaigrette

THIRD COURSE

Braised Wagyu Short Rib / Slow-braised Pioneer Ranch wagyu short rib with seasonal vegetables, Yakiniku Sauce, and finished with fresh Asian herbs

FOURTH COURSE

Milk & Honey / Toasted grain ice cream with delicate wagyu-fat caramel
