New Year’s Eve at Bos Taurus: The 44° Dinner
Celebrate the New Year with a culinary journey across Oregon, led by Chef Héctor, whose roots reach from Galicia, Spain to the heart of the Pacific Northwest.
This exclusive seven-course tasting menu follows Oregon’s rise from sea to summit—beginning with Yaquina Bay scallops and Dungeness crab, moving through the coastal range with elk tartare and forest mushrooms, and culminating high in the Cascades with aged Oregon goat cheese and chocolate from the summit peaks.
Each course captures a sense of place and season, blending Galician heritage with Oregon’s wild bounty. An optional sommelier-curated wine pairing is available to complement the experience.
