A menu built entirely around Oregon's finest lamb — whole cuts, raw preparations, slow braises, and the kind of depth that only comes from knowing exactly where your ingredient came from. The Bos Taurus kitchen partnered with North 44 Farm to craft something that won't appear anywhere else — rounded out with regional grains, foraged huckleberry, and produce at the peak of the season.
